TURKEY HASH

3 tablespoons butter, divided

1 yellow onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

4 cups leftover turkey, cut into small cubes

4 cups leftover mashed potatoes, cold

Salt and pepper to taste

1 teaspoon chopped fresh sage

1 cup Japanese breadcrumbs (panko) or other breadcrumbs

Melt 1 tablespoon butter in saute pan and saute onion and peppers together until onions are translucent. Let cool.

Combine turkey, mashed potatoes, salt, pepper and onion mix and sage. Mix well and form into 12 patties, then dip into breadcrumbs.

Melt 2 tablespoons butter in saute pan and fry patties until golden brown on both sides.

Makes 6 servings.
