Gingerbread Men
From Diana Corbett's Cookie Exchange
Ingredients
1 cup butter or margarine
1 cup sugar
1/2 cup dark molasses
1 teaspoon each, ginger, cinnamon, nutmeg, cloves
2 eggs, well beaten
1 teaspoon vinegar
5 cups flour
1 teaspoon baking soda
Raisins (garnish)
Cinnamon candies (garnish)

Instructions
In a saucepan, cream 1 cup butter or margarine with 1 cup sugar. Add 1/2 cup molasses, 1 teaspoon each ground cinnamon, nutmeg, cloves and ginger; mix well. Stirring constantly, bring to a boil.

Remove from heat – allow to cool. When lukewarm, stir in 2 well-beaten eggs and 1 teaspoon vinegar. Sift 5 cups flour with
1 teaspoon baking soda; stir into molasses mixture to form smooth dough. Chill for several hours.

When ready to bake, divide dough into six portions; roll out on aluminum foil. Cut with gingerbread man cutter; remove excess dough. Bake at 350 degrees for 8-10 minutes.

Garnish with icing for eyes, mouth and buttons, or be creative and use raisins for eyes and buttons, cinnamon candies for mouth. Makes 36.
